Leatherwood is a tree endemic to the island of Tasmanialocated in southeastern Australia – of the Eucryphia family (not to be confused with the eucalyptus), leatherwood is the emblem of Tasmania (after the devil). It’s also known as Rosewood, probably because of its flavor and smell!
It comes from the same family as Ulmo (eucryphia cordifolia) family.

It’s thanks to concessions granted by the Australian government that we can enjoy this highly floral nectar.

When they bring it back for extraction, they make sure that the temperature does not exceed 45°. This guarantees the honey’s flavor and preserves its natural qualities.
Despite recent fires that have partly scattered these ancient forests, we were once again able to stock up on Tasmanian leatherwood honey.
