Lavender is a hardy, evergreen perennial shrub that grows on limestone soil in sunny locations. It belongs to the Labiatae family. Lavender flowers between late spring and early summer. Its nectar is used to produce high-quality honey, aromatic and much appreciated. Lavender honey is harvested from late July to early September. And contrary to popular belief, the harvest is rarely bad. The main production areas are in Alpes de Haute-Provence, Hautes-Alpes, southern Drôme, Vaucluse, Var and north-eastern Gard. Although we can now find lavender fields in Quercy or Limousin, which means we can find excellent lavender honeys in the eastern part of France!

Liquid, it takes several weeks to thicken, and depending on the type of lavender harvested, its crystallization will be more or less fine. Once set, lavender honey whitens slightly, but always retains its light tones.
