Honeydew Honey

The name “Maquis” refers to a form of Mediterranean vegetation, the maquis, and even more to the Corsican expression “prendre le maquis” (“Piglià a machja”), meaning to take refuge in the forest to evade the authorities or a vendetta, or to the various armed resistances that have taken place throughout history.

More seriously, the term “maquis” refers to everything that grows between 0 and 900 meters. But maquis is purely wild. It’s natural vegetation, totally untouched by human intervention.

In the maquis, the vegetation is rather low and dense. It forms a tangle that is sometimes impenetrable. This makes it difficult to find your way around certain parts of the maquis, unless you know the area like the back of your hand. It’s easy to see why resistance fighters “took to the woods”.

There are about 2000 different species in the maquis Corsicabut the most typical plants found on these siliceous or acidic soils are cork oaks, holm oaks, rockroses, tree heather, arbutuscalycotome and gorse.

The maquis is unique in that it blooms all year round: in spring with white heather, rockrose and broom. And in autumn with arbutus.

Maquis plants are hardy. They adapt to Corsica’s many climatic conditions. For example, some species adapt to dry spells by retaining moisture in their leaves.

Our honey made from maquis honeydew is harvested this year in Balagne.

The taste, smell and preservation of honeydew honey:

It is powerful and long on the palate. It is reminiscent of cocoa and licorice, thanks to the presence of cistus. Dark in color, its fragrance is intense.

Without a doubt, it appeals to lovers of strong, distinctive honeys.

The use of maquis honeydew :

It can be used in cooking to garnish vegetable or meat dishes, as well as in evening herbal teas.
