Mustard is grown organically, i.e. without chemical fertilizers or pesticides.
The seeds are then sorted, ventilated and dried before being ground in a hammer mill and then on a stone millstone. Grinding only takes place during preparation and packaging.
Honey mustard is made from wholemeal flour.
Mustard flour is mixed with slightly diluted honey vinegar and 1% Guérande salt.
Honey vinegar adds flavor and sweetness.
The quality of mustard is largely determined by the quality of the vinegar used, which accounts for around 50% of its composition.
The mustard sold on the Comptoir Du miel website is neither sweet nor sour, since the vinegar used no longer contains sugar.
