Chestnut blossom:

The chestnut blossoms extends from June to late July. It is very dense and long. It’s at this precise moment that our beekeeper plays a decisive role, placing his hives in the heart of the chestnut grove.

Extracted honey may be light or dark, depending on the presence or absence of honeydew.

The bees, intoxicated by the smell of nectar, will actively forage, helping to fertilize the flowers. These flowers, called catkins, give rise to chestnuts.

Like seventy percent of fruit trees, the chestnut tree needs the presence of bees to produce its fruit. Chestnut honey is the fruit of this delicate balance.

The benefits of organic chestnut honey :

Thanks to the presence of honeydew, chestnut honey is anti anemic and antioxidant. Its main characteristic is its high tannin content. It also contains numerous trace elements beneficial to health. An infusion of chestnut leaves is said to treat whooping cough, bronchitis and bronchial secretions.

As a decoction or gargle, the leaves or bark are effective against throat irritations. Chestnut honey is also an excellent healing agent. It is also said to play an effective role in blood circulation.

Taste, smell, preservation:

Chestnut honey crystallizes rather slowly. Its high fructose content means that it will remain liquid for a long time. Crystallization can be fine or coarse. During this crystallization phase, the honey darkens and takes on a brilliant sheen. In some years, its taste can resemble chestnut cream – a real treat!

The scent of chestnut honey is powerful. You’ll recognize it anywhere! Its taste is more or less bitter, depending on the year. It is full-bodied and warm.
