Leatherwood is a tree endemic to the island of Tasmania<\/strong><\/a>located in southeastern Australia – of the Eucryphia<\/a> family (not to be confused with the eucalyptus<\/strong><\/a>), leatherwood is the emblem of Tasmania (after the devil). It’s also known as Rosewood, probably because of its flavor and smell! <\/p>\n

It comes from the same family as Ulmo<\/strong> <\/a>(eucryphia cordifolia) family.<\/p>\n

Leatherwood forests are found in the north-western part of the island. Harvesting leatherwood honey is very special: <\/p>\n

In fact, the Australian state grants beekeepers the right to place their hives in native leatherwood forests. Imagine this in France! <\/p>\n

These concessions last an average of 10 years, and the beekeeper who owns one can consider himself secure in the knowledge that he’ll never need it again! Leatherwood honey is so sought-after that beekeepers are sure to sell their entire harvest. <\/p>\n

It’s thanks to concessions granted by the Australian government that we can enjoy this highly floral nectar.<\/p>\n

Once a year, Tasmanian beekeepers head out into the wild to harvest this very special honey:<\/p>\n

When they bring it back for extraction, they make sure that the temperature does not exceed 45\u00b0. This guarantees the honey’s flavor and preserves its natural qualities. <\/p>\n

Despite recent fires that have partly scattered these ancient forests, we were once again able to stock up on Tasmanian leatherwood honey.<\/p>\n
