Its taste, reminiscent of the scent, is quite strong, fruity, aromatic and woody<\/strong>. It is pleasant and persistent on the palate. <\/p>\n

Reddish-amber in color, it lightens during crystallization. Beware of crystallization, which can be coarse and therefore not to some people’s liking! <\/p>\n

What’s more, it’s not easy to store. This acidic honey tends to develop HMF quickly. It must therefore be kept at a constant temperature to avoid thermal shock. <\/p>\n

The benefits of bramble honey :<\/h2>\n

Like all honeys, bramble honey has many virtues and benefits. Its high concentration of directly-assimilable sugars makes it an excellent energy-booster. It is tonic, energizing and diuretic. Its low PH makes it a honey with strong antibacterial<\/strong><\/a> and antifungal activity. It is also reputed to have a high concentration of vitamins<\/strong><\/a>B1, B2, B3, B5, B6 and, of course, vitamin C. <\/p>\n

This honey’s bechic properties are well proven! It is also effective in soothing sore throats and has a very interesting energizing effect.* <\/p>\n

Bramble leaves were used in decoctions to relieve sore throats. So bramble honey is said to have the same properties as bramble leaves!
